Chicken and Avocado Tortilla Roll-Ups Recipe

Getting children excited about eating healthy foods can be a daunting task for many parents. Children are often notoriously picky eaters and trying to find ways to ensure they are getting the nutrients they need can sometimes feel like an impossible task.

Here at The St Clare Group Early Education and Care, we’ve found that one of the best ways to encourage healthy eating habits with your child is by getting them involved with the preparation of snacks or meals as this makes them more invested in what they’re eating.

Keeping that in mind – we have a great recipe which incorporates a range of healthy ingredients and is so simple even your littlest helper can get involved. These chicken and avocado tortilla roll-ups are delicious and are certain to make good food choices more attractive even for the pickiest of eaters. This recipe only includes a few different ingredients but you can add any other veggies you have on hand to make it even more nutritious!

What you’ll need:

  • 2 cups shredded roast chicken
  • 1 mashed ripe avocado
  • 2-4 tablespoons plain Greek yoghurt
  • 2 tablespoons lime juice
  • 2 tablespoons of finely diced red onion
  • 2 sliced green onions
  • ½ teaspoon garlic powder
  • ½ cup grated tasty cheese
  • Salt and pepper to taste
  • 6 tortillas

NOTE: Make sure to substitute cheese and yoghurt for dairy-free options and tortillas for gluten-free options, according to any allergies or intolerances.

How to do it:

  1. In a large bowl combine all the ingredients for your tortilla filling mixture, stirring through until everything is blended.
  2. Spread your filling mixture evenly over your tortilla base and roll up tightly.
  3. Continue with this process until all your tortillas are filled.
  4. Refrigerate your tortillas for 30 minutes or until firm.
  5. Remove tortillas from fridge and slice into 2cm thick pieces.
